It all starts with the shape. If you hold one of the exquisite hand tied pods in your hand it has the appearance of a peach or at least it does if you use a little imagination!\u003c\/p\u003e\n\u003cp\u003eSo why would someone create a tea in the shape of a peach? As we said it has to do with a monkey. An ancient Chinese fairy tale tells the story of how Wangmu the Empress of Heaven ordered the King of the Monkeys to guard her precious peach orchard. Busy organizing her 60th birthday party, Wangmu wanted to ensure that she would have enough fruit to feed her guests. (It should be noted that in ancient China peaches were considered to be a symbol of long life and were commonly given away at birthdays.)\u003c\/p\u003e\n\u003cp\u003eThe Monkey King however, being a monkey, plucked all the ripest peaches in the orchard for himself, and ate the entire lot, leaving only the small unripened fruit for the party. The big day arrived and Empress Wangmu was furious. To punish the Monkey King, she used her magic to strip him of his royal title and locked him up in a cave.\u003c\/p\u003e\n\u003cp\u003eLuckily, a Monk named Tangshen came by and saved him. After discussing his predicament with the Monk, the Monk agreed to help him. Tangshen showed him a technique for tying fresh green tea leaves with an Amaranth blossom (known colloquially as the 1000 day flower) into the shape of a peach. The Monkey did as he was told, tied 1000 of the tea balls, and presented them to Empress Wangmu. So impressed was the Empress with the delicious tea that she reinstated him as King, and from that year forward served the tea at her birthday instead of peaches as a new symbol of longevity.\u003c\/p\u003e\n\u003cp\u003eIn parts of modern China, 1000 Day Flower tea is still served at birthdays and anniversaries, especially those of community elders. Besides its symbolic importance, the tea is delicious. It is produced using the tender spring buds of plantations situated between 500 to 800 meters above sea level in Northeast Fujian. Teas from these gardens are noted for their incredible freshness and purity due to the crisp clear quality of the air at such high altitudes. The Amaranth flowers tied in with the tea also come from Fujian, but from a little farther to the South. Traditional Chinese medicine maintains that the flower is beneficial for the liver, is effective for reducing body heat, and can brighten the eyes. And like everything produced in China, when we say large, we mean large on a scale the likes of which you've never seen before.\u003c\/p\u003e\n\u003cp\u003eIn 2003, the province - which covers roughly 394 000 square kms or 4.1% of China's landmass - grew more than 3 billion flowers commercially! 3 billion! That's the equivalent of 3 stems for each of China's 1 billion citizens. Now that's a lot of flowers.\u003c\/p\u003e\n\u003cp\u003eThe high production numbers have secured Yunnan's position as China's top flower producing region for more than 10 years straight. During those years, the province's Carnations, Forget-Me-Nots, Lilies, Osmanthus, and Jasmine flowers have accounted for 45% of China's total annual floral exports. So what makes the conditions in Yunnan so ideal for growing flowers? The answer lies in its geographical location. Yunnan sits directly below the Tropic of Cancer, the farthest northern latitude at which the sun can appear directly overhead - an event that occurs once a year on the 21st of June. In short Yunnan gets a lot of direct sunlight. And as every good schoolchild knows flowers love the sun and lots of it. Couple that with an average rainfall of between 1 000 to 1 9000 mm annually, and you've got ideal conditions.\u003c\/p\u003e\n\u003cp\u003eAs every good tea-drinker knows, Yunnan is also famous for growing tea. So it seems only natural that given the prominence of the local floral industry, tea artisans would create a tea in its honour - 3 Flower Burst. The idea behind the tea is that as it brews, it unfolds and mimics the way the lush Yunnan countryside bursts open with colour in the springtime. The tea is produced by tying Lily, Osmanthus, and Jasmine blooms together with steamed full leaves of Yunnan green tea. As the tea dries, the flowers are held inside the way seeds are concealed in the damp earth. Drop the tea into a glass pitcher, infuse it, and watch the miraculous bloom unfold. There's Camellia brevistyla Camellia fraternal Camellia japonica Camellia reticulata Camellia sasquana and of course Camellia sinensis. These many varieties grow throughout the world for example Camelia japonica is the State flower of Alabama but the majority are found in China. Take Yunnan Province for example the origin of this handcrafted artisan tea. Yunnan is the southernmost province of China geographically situated along the Tropic of Cancer. The Province is hot wet and subsequently home to 18 000 of China's 30 000 plant species - the perfect location for the natural evolution of a multitude of Camellia species. The cowherd began visiting the maid as often as his duties permitted him and when he did the maid would put down her weaving and devote herself to his love. Over time, the love between the two saw them forsake their work all together. The Jade Emperor became angry that they should shirk their duties and decided to punish them in the form of banishment to opposite sides of the Silver River. The cowherd and the maid were devastated. In order to soften the blow the Emperor made one allowance. Every year on the seventh day of the seventh month of the Chinese lunar calendar, (Aug. 2) he would permit them to meet on a bridge over the River to hold each other for just one night.\u003c\/p\u003e\n\u003cp\u003eThe wife of the tea grower explained that the legend came from the fact that on that night, these two stars do in fact come together high up in the heavens. This is one of these teas. After the first 3 weeks of the new season the tea used to produce the silver balls grows (but this special tea only grows until May 10th). Over the years special bushes which have a higher than usual incidence of mottled and white leaves have been cloned and planted in one location of the tea estate. The leaves of these bushes grow longer more quickly and are covered with hairy white down giving them a silver appearance. The top two leaves and the bud are plucked. The long leaves are hand rolled lengthwise- one by one! A group of them are tied together, the leaves in the middle of the cluster are clipped short (being careful to leave the outer leaves full length) and then the long outer leaves and molded over the short clipped middle leaves into the shape of a ball. The silver balls are then wrapped in an individual mesh covering and steamed to halt any possible fermentation. The mesh is then removed and the silver balls are re-wrapped in special paper so when they dry the beautiful round shape is maintained. Generally regarded by many as the birthplace of tea, tea has been grown tea in Yunnan for almost 2 millennia. It stands to reason that a growing region with over 2000 years of history would produce many interesting variations. This tea, with its silver white tips hand sewn around delicate rosebuds is perhaps one of the most unique of these. Only the finest silver tips plucked from tea bushes grown at 1800 meters above sea level are used in its production. It is not known exactly when this tea was first produced but records in Yunnan indicate that it was being made at least as long as 250 years ago. What is known however is how this tea got its interesting name.\u003c\/p\u003e\n\u003cp\u003eYunnan lore has it that up until World War II, Weeping Rose was originally known simply as \u003cem\u003eRose Chrysanthemum\u003c\/em\u003e tea. During the war, as battle raged with Japan, the allied forces built the famous Burma Road to move troops and supplies through China. Starting in India, the road ended in Yunnan province. As the story goes, a local widow named Huan Yue, who worked in a Yunnan tea factory hand stitching the Rose Chrysanthemum tea fell in love with a dashing young British pilot stationed in Yunnan near the end of the war. As their love grew, the woman's heart, which was still saddened by the loss of her first husband, grew stronger and the two decided that once the war ended they would marry. Tragically, this was not to be. One day, the young pilot was called upon by his superiors to fly a secret reconnaissance mission over the Gulf of Japan. He promised to be home that evening for dinner, said goodbye to his lover, and flew off as day broke over the horizon. As the day wore on, Huan Yue began to sense that something was wrong. Night fell with no word from her beloved pilot. Grief stricken, Huan Yue curled up in front of her cooking fire and went to sleep. That night her pilot came to her in a dream and told her that he had been shot down over the Gulf. The next morning, Huan Yue went back to the factory. As she began to sew the delicate rosebuds into the tealeaves, she began to weep uncontrollably, her tears falling into the tea.
