The Lal Bagh garden is one of the most famous gardens in Bangalore a city revered throughout the world by botanists for it's plentiful rose gardens and multitude of rose varieties. To this day in the Lal Bagh garden alone grow over 150 varieties of the beautiful and fragrant flowers.

As the story goes the chai-wallah who was brewing his chai that day to sell to visitors in the garden discovered that rose petals from a bush being pruned nearby had fallen into his teapot. Since the chai-wallah intended to turn a profit that day rather than waste the now scented tea and brew a fresh batch he simply added his other ingredients to the pot. As he mixed in his cardamom ginger black pepper and cinnamon (the traditional ingredients of Indian chai) he discovered how well the spicy aromas blended with the floral tones of the rose petals. According to legend the chai-wallah turned a record profit that day. Word soon spread about the magnificent chai being served in the Lal Bagh garden. One of the more believable theories holds that it was created by Indian gypsies hundreds, perhaps even thousands, of years ago. Gypsies live in almost every quarter of the Indian sub-continent. And although there are many different tribes with unique customs and stories, oral histories maintain that they all descend from the Lohar people, an ancient group of blacksmiths known to be fierce warriors. Legend has it that the Lohar originated in the city of Chittorgarh but were defeated in a battle in 1308 and forced out of the city. From that point on, they became a nomadic people and traveled by caravan wherever the dusty trail took them.

Hmm, if you think that sounds like the perfect opportunity for sampling and collecting spices from all the various and far flung corners of India, you'd be right. Over the centuries the gypsies developed a very flavorful and spicy cuisine using whatever spices they had available to them in the different places they would stay. Ginger... cardamom... cloves... coriander... the list is almost endless. Being surrounded by incredible spices, a good cook gets a few ideas. Now although nobody knows exactly when it happened, at some point, someone decided to try adding a mixture of spice to a pot of hot tea. (At the time, gypsy tea was brewed using milk instead of tea in order to fortify the body during long caravan rides.) The spices blended with the hot milk and tea and created the most wondrous beverage. Cultural exchange between Japan and India started sometime during the 6th Century when Indian Buddhism was brought to Japan by traveling monks. The elephants lived for many years in the zoo and were visited by millions. Following the war, India was also the co-signer of one of Japan's first post war peace treaties and helped usher in a new era of diplomatic relations. Over the next few hundred years, wave after wave of Western arrivals, Danes, French and British fell under the intoxicating spell of spicy cardamom, cinnamon, coriander, cloves and black pepper. The problem was of course that trade of the spices came with a hefty price in the form of costly wars with India's indigenous kingdoms. Subsequently, what spice made it back to Europe fetched exorbitant prices and came to be available only to the exceptionally wealthy.

As any modern day visitor to India will tell you, Malabar Spice is a little easier to come by these days. How so? The heady blend has evolved to become the signature flavor of spiced chai, added to the mix of India's ubiquitous drink along with hot whole milk and strong tea. Today, the drink is available on virtually every street corner, train platform and bus stop. And while no warfare is required to make your purchase, a little haggling never hurts.

We've decided to do our part to further propagate the sultry flavors of Southern India by developing what we believe to be one of the greatest chai blends ever created - decaffeinated Hi^Antiox Green Chai. Traditional Indian chai is a heady mix of spice and tea. Chai recipes are handed down from generation to generation the way westerners pass on grandma's apple pie recipe. The tea is traditionally brewed by boiling milk, adding good thick black tea, various spices and then boiling it again. The resulting mixture is thick, spicy and incredibly full-bodied. If your spoon stands up in the cup, it's ready!

Ok, that might be a little over the top, but it's no exaggeration to say that drinking great chai is almost a religious experience. As the brew reaches all the corners of your body it fills you with a warm glow that you will want to experience again and again. Luckily, if you're in India, spicy fresh chai is available just about everywhere. Chai-sellers, known as Chai Wallahs sell their concoctions at roadside stalls, train stations, anywhere you can think of. The tea is served in small clay cups known as chullarhs that are smashed on the ground once the tea is finished.

Our Master taster has sampled literally hundreds of chais served everywhere from Bombay to Darjeeling. Of all these, one stands out above all the rest. Just outside of the airport in Guwahati, Assam, there is a cab-stand tucked in behind a local shrine. While waiting for a plane to take him back to Calcutta many years ago, he accepted a cup of chai from the local Wallah. The cup, with its blend of pepper, cinnamon, cardamom and other spices quite literally blew his mind. It was this cup that inspired our version of Indian Spice Chai. So, even if you aren't in India, brew yourself a pot, summon your inner Chai Wallah by calling out "chay-ee! chay-ee" and watch your customers come back time and time again.

IMPORTANT: Turn your bag of Chai upside down a few times. If not, you should. For non-Hindus the experience is a fascinating one filled with warm greetings, peace and quiet and the inevitable invitation to share a meal and cup of spicy warm chai afterward. It was after such a visit to a temple in Chennai, (Chennai is the modern name for the city of Madras) that our Master Taster learned the formula for this wonderful green tea-based chai.

While our Master Taster has had Chai everywhere from Assam to Goa, what stood out about the cup on this particular occasion was that it was based on a green tea - traditionally, Indian chai uses black tea as its base. Not wanting to be rude and knowing how tightly guarded many tea-secrets are, he summoned both his courage and artful diplomacy to ask the temple cook how he had made the intoxicating blend. The cook was hesitant. To see if our Master Taster was worthy of receiving such a recipe, the cook asked him a series of questions about Indian tea. Thankfully, he passed the test and the recipe was written out for him to take home.

The tea you hold now is the result of this fateful temple visit. The blend is identical to the original in every way save for the base tea. While the original used an Indian green tea, ours is based on a premium Japanese Sencha grade tea, selected for its light flavor and ability to blend seamlessly with a multitude of spice. (As a side note, the idea for the name Fusion stems from our blending of Indian and Japanese tea traditions.) The cup is rich and warm, rolling over the taste buds with soothing notes of peppery spice. Perhaps on a future visit to Chennai, we'll bring a bag of this tea as an offering to the temple that inspired it. The play features a captive iguana that is tied up to the edge of a veranda while a cast of characters discuss their sometimes tormented sexual relationships - and we all know how complicated those can be! For his own part, Tennessee Williams was something of a tormented soul. At an early age he suffered a nervous breakdown and throughout his life lived in fear that he would go insane. Williams' subsequent outlook on life was that it was woefully impermanent. He is quoted as saying, "Whether or not we admit it to ourselves, we are all haunted by a truly awful sense of impermanence." It is perhaps because of this outlook that the playwright took such comfort in a hot cup of tea - its impermanent nature is what makes it so wonderful - after all, once brewed and enjoyed, the leaves are discarded.

OK, back to the play. He used as its base a lush and full-bodied black Assam in order to impart the chai a wonderful depth. Next, white chocolate, caramel, and a heady blend of spices from the Malabar Coast of India were added to the mix - sharp ginger, cardamom, coriander, cinnamon, cloves, and black pepper. Finally, calendula petals and elder blossoms were added to give the blend some color - representing Williams' colorful existence.

The result, we're sure you'll agree, is one of our most intoxicating chais. The needle shaped leaves of the Rooibos bush (Latin: Aspalathus linearis) produce a caffeine free drink that is noted by nutritionists and health consultants the world over for its soothing character. Masala chai with its base mixture of ginger cardamom cinnamon coriander clove and black pepper is generally considered to be one of the more overtly spicy examples of all blends. Well, after a recent visit to Tokyo, our Master Blender decided he wanted to develop tea blend that would capture the excitement and incredible mix of sights and sounds offered by the metropolis. He was stumped however on how to develop a tea that would do justice to the diversity of activities the city had to offer. After numerous attempts, he determined that only a chai, with its multitude of flavors would do the trick. In keeping with the Japanese tradition of drinking green tea, the chai would be based on a Japanese style green tea mixed with ginger, coriander, cardamom and cinnamon. The first iteration of the blend was almost perfect, the spiciness of the components melded with the tea to offer an incredible rush, one that could be topped only by stepping off the train at Shinjuku station, one of Tokyo's largest train stations. (Some 3.7 million people use Shinjuku per day!) As his mind raced, it suddenly occurred to our Master Taster what would make the blend perfect -it needed to be decaf! As a decaf, the spicy blend offered the kind of relaxation one needed after spending a day in such a massive place. We're pleased to offer this amazing blend in honor of one of Tokyo -city of cities! Umai! (That means delicious in Japanese.)

IMPORTANT: Before brewing, turn your bag of Chai upside down a few times - powdered spices in the blend may settle during transport.

Tea Type: Decaffeinated

Country: China India

Region: Hunan Travencore

Grade: Japan Sencha Style

Altitude: 1500ft below 500-2000ft. above sea level

Manufacturer Type: Pan fired Traditional

Ingredients: Luxury decaf green tea Ginger Cardamom Cinnamon Coriander Clove Black pepper

Cup Characteristics: Lightly astringent with good green tea flavour.
