However, in direct contrast to the soothing qualities of a cup of freshly brewed tea, the Yunnan tea plantations, if legend is to be believed, were the byproduct of a terrible war. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAccording to ancient Chinese military texts, during the ancient period of the Chinese three kingdoms, (220-265 AD), a marauding army led by a General Kong Ming, (at the time one of the most feared men in China), conquered Yunnan province after invading it from nearby Hunan. Kong Ming, besides being a brilliant military strategist, was also a man of science, and specialized in botany. After conquering the province he conducted a thorough survey of its topography and biology and deemed it to be perfect for the cultivation of tea. Subsequently, the general ordered 1000 of his men to plant tea seedlings they had brought with them from Hunan and plant them throughout the highlands of Yunnan.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWhether or not the legend of Kong Ming is to be believed, the environment and altitude of Yunnan province do create an absolutely perfect environment for growing tea. The tea there is grown at very high elevations ranging from 4500-6000 feet above sea level. (Interestingly it is the height that gives the province its name; Yunnan translates into English as \"South cloud\"). The altitude, combined with the warmth and humidity of the highlands creates a natural greenhouse that Yunnan tea plants thrive in. Ying Ming Yunnan, like most Yunnan teas is known by its full-bodied and slightly sweet flavor. The Fukienese word souchong means sub variety - that is a sub variety of other black teas from the Wuyi Mountains of Fujian. When Lapsang Souchong was first exported to western European countries and became famous on the international markets - it was no doubt due to the distinct aroma and flavor. Interestingly the best Lapsang is produced in the nature preserve located in the Wuyi Mountains where the high mountains with thick pine forests and heavy mist provide the ideal environment for growing top quality tea.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eLegend claims that the smoking process was discovered by accident. During the Qing dynasty, an army unit passing through Xingcun (Star Village) camped in a tea factory filled with fresh leaves awaiting processing. When the soldiers left and the workers could get back into the premises, they realized that to arrive at market in time, it was too late to dry the leaves in the usual way. So they lit open fires of pinewood to hasten the drying. Not only did the tea reach the market in time, but also the smoked pine flavor created a sensation!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe method of production is as follows: The leaves are first withered over fires of pine or cypress wood. After pan-frying and rolling, they are presses into wooden barrels and covered with cloth to ferment until they give off a pleasant fragrance. The leaves are fired again and rolled into taut strips. Then they are placed in bamboo baskets and hung on wooden racks over smoking pine fires to dry and absorb the smoke flavor. When finished they are thick, glossy black strips, and produce a dark red beverage with a unique aroma and taste. It is generally consumed with sugar or milk. Depending upon one's palate the taste can be light and intriguing or it can be heavy and overpowering. Through all of Taiwan's political ups and downs during the past couple of centuries, the art and business of tea has prevailed producing some of the world's finest cups. Although these days Taiwan is often associated with semi-fermented Oolongs, the industry there actually began with the development of black tea - teas such as this outstanding Lapsang. Local teas originated from two varieties of wild growing plants, their primary difference being the color of their sprouts. This tea, known as \u003cem\u003eTaiwan Mountain tea\u003c\/em\u003e had either greenish tending light purple sprouts or purple-red tending fuchsia sprouts. Initially it was thought that neither of these teas were commercially viable. That all changed however when improvements were made to a varietal sub-categorized as Taiwan Tea No. 18 making it suitable for black tea production.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIt is the belief of our Master Taster, that due to the exceptional appearance of the leaf, Kangaroo Lapsang is probably produced from plants stemming from this original Tea No. 18.Production begins by withering freshly picked tea over pine and oak fires, pan-firing, and then rolling the leaf by hand. Once rolled, leaves are pressed into wooden barrels, covered with cloth, and allowed to ferment. Next, the leaves are re-rolled into tight strips and placed in bamboo baskets, which are hung over burning pine boughs. As they dry, the leaves further develop their rich smoky flavor. Because of the quality of the fresh leaf used to produce Kangaroo Lapsang, the resulting tea is one of the worlds finest. The flavor is robust, deep, and highly aromatic, filling the mouth with distinctive smoky pine notes. The flavor leads us to another quote, \"The beauty of Taiwan tea resides in the flavor, the clearness of its coloring, the purity of its taste, and the elegance of its aroma.\" That being the case, this tea is a true example of the beauty of Taiwan tea. (As for the odd name - the true origins have been lost to the mists of time - although legend has it that a ship carrying Kangaroos to the Boston Zoo from Australia almost 200 years ago capsized off the coast of Taiwan, then known as Formosa. A study in Japan indicated that all tea lowered cholesterol and that pu-erh was more effective than green tea. In desperation, he traveled to Shizhusi Temple to visit a long lost cousin who was a monk there. The monk, sensing that his cousin was in dire straits offered him a bed in the famous tower. That night, the artisan dreamt that his fields were filled with the thick bushes of a tea variety he'd never seen before. In the morning, he awoke, thanked his cousin and set off back to Fujian. While this technique of its own is not unique, Mr. Huyincai also developed a complicated production procedure that resulted in a tea so special he decided to name it 9 Bend Black Dragon.\u003c\/p\u003e\n\u003cp\u003eUnfortunately, we can't tell you much about his complicated production procedure since the details of it are judiciously guarded by a handful of people in Fuan City to this day. What we can tell you is that the name is both derived from the lucky 9 Bend River that flowed through his birth-place of Wuyishan (9 is a lucky number in China), and the symbol of the black Dragon, long considered lucky in China. We can also safely say that the luck rubbed off. Within a short time his tea had won just about every award there was to be won throughout China and Europe. As its popularity grew, the tea came to be regarded as a precious gift amongst the nobility and ruling classes of both places. Letters began to pour in from people who had drunk the tea and been rewarded with bouts of good luck - a Prime Minister re-elected here, a nobleman awarded a new fifedom there, etc. Needless to say, Mr. Huyincai became very wealthy. In fact he was considered for a time to be one of the wealthiest men in Fujian. Thankfully, besides good luck, Mr. Huyincai was also blessed with brains and so reinvested his newfound wealth back into his factory and started the operation that produces his tea to this day.\u003c\/p\u003e\n\u003cp\u003eAs in the days of Mr. Huyincai, 9 Bend Black Dragon - which goes by the production name of \u003cem\u003ePanyong Needle\u003c\/em\u003e - is only produced in the district of Panyong in Fuan City. Most of us are familiar with the Hollywood version of this sweeping Russian tale starring Omar Sharif. The story however was originally penned in novel form by Boris Pasternak, a Russian writer who wrote during the days of the U.S.S.R. The story centers around one Doctor Yurii Andreievich Zhivago who goes to work as a medic in 1919 during the Russian Revolution and Civil War. Boris Pasternak won the Nobel prize for literature in 1958 for the work but was forced to turn down the honor by the Soviet government. Well, we thought we'd honor Pasternak, a lifelong tea lover, by naming this wonderful version of Lapsang Souchong after his seminal work.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWhy did we choose to honor him with a Lapsang? Well, there are two reasons. The first is that it was Pasternak's favorite. The second is that Lapsang Souchong has long been associated with tea drinking in Russia. This tea with its smoky aroma evokes the mystery of the far East and is commonly brewed in samovars from Vladivostok to St. Petersburg. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eLapsang Souchong is produced in Fujian province in China. The process begins with freshly picked tea that is withered over pine or cedar fires, pan-fired, and then rolled by hand. Once rolled, the leaves are pressed into wooden barrels and covered with cloth and allowed to ferment until they begin to emit a pleasant aroma. Once fermented, the leaves are rolled again into tight strips and then placed in bamboo baskets which are hung over burning pine boughs. As the leaves dry, they further develop their smoky flavor. The Lapsang process results in a tea with leaves that are thick, black, and glossy.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe result in a very strong, assertive cup - just the type of tea favored by the Russians. To the uninitiated, the intensely smoky taste of Lapsang Souchong may be an acquired taste in the same way that Scotch or fine cigars are. We can well imagine Boris Pasternak quietly penning his groundbreaking novel while sipping pot after pot of this wonderful tea. The leaves come from the Yunnan Dayeh variety of tea tree - which is purported to be closely related to the original tea tree of pre-glacial times. During the 1200's the troops of Kubla Khan are said to have introduced Pu-erh to the rest of China for its medicinal value. Pu-erh is often taken for relief of indigestion and dysentery but has also been reported very useful in the reduction of cholesterol. Kunming Medical College claims that pu-erh can lower cholesterol by 17 percent and triglycerides by 22 percent. They may have been slightly over zealous about the properties of pu-erh as a University in Berlin and another in France found that the claim was perhaps overstated. A study in Japan indicated that all tea lowered cholesterol and that pu-erh was more effective than green tea. Other followers of \"Chinese tea for health\" report that pu-erh can; \"cut the grease, help digestion, promote body fluid secretion, quench the thirst, invigorate the spleen and dispel alcoholic toxins\" Whether pu-erh is effective or not for the various claims that researchers and tea drinkers make has not been firmly established; what is certain is that pu-erh is rather unusual and has properties many other teas do not share.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe method of production is: The tealeaves are picked, rolled, withered in the hot sun, after which they are steamed and pressed into cakes.
