It is both a propagated and wild grown berry which some claim originated in France. Cassis is a very popular beverage throughout Europe, known for being aromatic in smell and in taste. This particular aspect of Black Currant is very evident on this tea. Black Currant gained notoriety in 1712 for its beneficial properties, which were published by the Abbot Bailly inferring that Black Currant was indeed an aphrodisiac and should be consumed with great care. On a hot summer day Black Currant quenches one's thirst very well.\u003c\/p\u003e\n\u003cp\u003eWe thoroughly scrutinize our decaffeinated teas to ensure that they stand up to Canadian Quality specifications. All of our decaffs are processed using the C02 Process. The advantage of this decaffeination process is that no chemical solvents are used to remove the caffeine. Using the naturally occurring C02 in a circulation process, which carefully uses high pressure and temperature to extract the caffeine, the origin distinct character of the tea is retained in the cup. There is a slight change in the character of the tea due to the process, but the end result is an uncompromising cup of tea with no chemical overtones.\u003c\/p\u003e\n\u003cp\u003eWe use high grown Ceylon tea as the base for decaf tea for several reasons: High grown Ceylon gives us the character we are looking for - a flavoury and satisfying tea. The high grown estates are visited by us on a yearly basis to confirm that they undertake proper manufacturing techniques, keep plucking standards high, and reinvest in the estate and its personnel. Most importantly, high grown Ceylons retain their character under C02 decaffeination processes much better than other teas we have tested. We're talking about a city with more people than live in all of Canada packed into a land mass only 4 and a half times the size of New York City. (What's even more amazing is that the city grew that big in only 200 years. By the 18\u003csup\u003eth\u003c\/sup\u003e century Edo, as Tokyo used to be called, had a population of one million.) Miraculously, the city functions exceptionally well, trains run on time and go everywhere, people are incredibly polite and friendly and there's more to do in a compact area than anywhere else you are ever likely to go.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eNow, you may well be asking, what does this have to do with Chai? Well, after a recent visit to Tokyo, our Master Blender decided he wanted to develop tea blend that would capture the excitement and incredible mix of sights and sounds offered by the metropolis. He was stumped however on how to develop a tea that would do justice to the diversity of activities the city had to offer. After numerous attempts, he determined that only a chai, with its multitude of flavors would do the trick. In keeping with the Japanese tradition of drinking green tea, the chai would be based on a Japanese style green tea mixed with ginger, coriander, cardamom and cinnamon. The first iteration of the blend was almost perfect, the spiciness of the components melded with the tea to offer an incredible rush, one that could be topped only by stepping off the train at Shinjuku station, one of Tokyo's largest train stations. (Some \u003c\/span\u003e3.7\u003cspan\u003e million people use Shinjuku per day!) As his mind raced, it suddenly occurred to our Master Taster what would make the blend perfect -it needed to be decaf!
