They are manufactured very similar to black teas but are given a much shorter withering period a light roll (according to the type of oolong being made) and then allowed to ferment only until the edges of the leafs start to turn brown. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Oolong tea. Se Chung Oolong has a shorter fermentation time than other Oolongs from Fujian province resulting in more subtle Oolong character.\u003c\/p\u003e\n\u003cp\u003eThere are delicate notes of Ti Kuan Yin style flavor combined with a slight herbaceous green character. This is why this particular tea is sought after - delicate flavor notes of a top Oolong combined with green tea characters. The best China oolongs come from Fujian Province - in the Wuyi Mountains area since Fujian province is the historical 'birthplace' on China oolongs. The method of production of Oolong teas is complicated. The tea maker brings all his skills to the fore to define 'his' oolong. An elderly monk who was suffering from a 'cold sickness' was unable to be cured by the local doctors. It was known there was a tea maker whose special tea made people well again. The name stems from an ancient legend that highlights the benevolence of Guan Yin namesake of Ti Kuan Yin the leaf style of Blue Spring. Guan Yin was a Bodhisattva a Buddhist term that describes a being who has attained enlightenment (like the Buddha) but decides to return to earth to lead others and help make their lives better.\u003c\/p\u003e\n\u003cp\u003eAccording to Buddhist belief every Bodhisattvas by their very nature is compassionate toward others but Guan Yin known also as the Iron Goddess of Mercy was thought to embody the compassion of all enlightened Buddha-like beings. According to the ancient tale there was an ancient village the name of which has long been forgotten that was suffering from a great drought. For many months not a drop of water fell from the sky.\u003c\/p\u003e\n\u003cp\u003eThe only moisture to be had was that which could be collected from nets that had been placed on the ground to collect dew during the night. Drinking water was in incredibly short supply and to make maters worse the local tea crop the villagers relied on for income had all but withered away to nothing. In desperation the villagers began to make offerings of what little they had to the only deity they though might be able to help Guan Yin. After a week or so of offerings a stranger appeared in the village driving a heard of goats.\u003c\/p\u003e\n\u003cp\u003eThe stranger asked the villagers if his goats might have some water as they had been walking for days. Not wanting to turn down a stranger's request the villagers poured what little water they had collected in the nets into a pitcher and handed it to the goatherd. Accepting the water the goatherd said You have honored my request and shown me the compassion that I will now show you. With that the stranger removed his cloak to reveal that he was in fact a she the Iron goddess of Mercy Guan Yin. Guan Yin then tipped over the pitcher of water. At the spot where its contents spilled out a miraculous spring of water began to gush out of the dry ground. No, the name does not have the same implications in Chinese as it does in English. This fabulous example of a Formosa Oolong is actually named after Mount Dung Ding, located in central Formosa, otherwise known these days as Taiwan. The fertile slopes of Mount Dung Ding are home to the world's finest Oolong tea plantations. Tea production first began in Taiwan in the 1850's when tea planters from the Chinese province of Fujian, home to some of the world's finest and most complex teas, emigrated to the small island nation. They recognized that the mountain climate and high elevations were optimal for Oolong production.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe literal English translation of \u003cem\u003eOolong\u003c\/em\u003e is Black Dragon. The name was given to the tea because it was thought that the intensely complex character of Oolong teas was similar to the spirit of the mythical creature. Interestingly Oolongs follow almost the same production as black tea. The major difference between the two is in its shorter fermentation period - Oolongs are often referred to as semi-fermented teas - Formosa Oolongs undergo a 60% shorter fermentation period. The result is a deeply complex tea that has characteristics of both black and green teas. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eMany centuries ago, a noted Chinese philosopher noted that the leaves of Oolong teas, \"should have creases like the leather boot of a Tatar horseman, curl like the dewlap of a mighty bullock, and unfold like a mist rising out of a ravine.\" This Dung Ti Oolong certainly fits that bill. The tea is entirely hand made and has a stunning leaf. When infused, the tea is complex - smoother than black tea, less grassy than green teas, and displays a certain balance and harmony in the cup that is almost orchid like. Sir Albert Henry George (we'll call him Sir Al for short) served as Canada's Governor General (the Queen of England's Canadian representative) from 1904 - 1911. It was during his tenure in this position that the tea that bears his name was first brewed. The Fenghuang's legendary status was highlighted by the belief that the bird's physical form was actually a conglomerate of the various body features of other birds. According to the Erya an ancient Chinese dictionary dating from the 3rd century the Fenghuang inhabited the craggy peaks of the Kunlun Mountains. The birds had the beak of a rooster a swallow's face a chicken's forehead the neck of a snake the back of a tortoise breast of a goose hindquarters of a deer and the tail of a fish. It was quite an animal.\u003c\/p\u003e\n\u003cp\u003eHow does the Fenghuang fit in with Red Hunan Oolong? Well, on one of our purchasing trips to Hunan tea country we were told that the Fenghuang played a role in Red Hunan's creation story. The tale went something like this:According to the grandmother of one of the growers we met many many years ago there was only green tea white tea and regular oolong tea which was sometimes referred to as blue tea. One day a royal decree came from a regional warlord that in a month's time he would be coming through the village for a visit and as such demanded a tribute.\u003c\/p\u003e\n\u003cp\u003eWhat's more, he demanded a tribute the likes of which had never seen before anywhere in China. Failing to impress the warlord would mean certain death. The village council was distraught. A week before the warlord was set to return the villagers still had nothing. The next morning as if by some miracle the village woke to the mournful cries of a wounded Fenghuang that had been shot down by the warlord's archers and landed beside the village well. The villagers nursed the great bird back to health and in return the bird told them a secret recipe for developing a new type of tea that would appease the warlord. At that time China was ruled by emperors and regional despots who enjoyed ultimate control over their territories - essentially what they said or did became law. During the Song dynasty there was one such ruler who controlled territory around Jinxing Shantou. Surrounding his palace were acres and acres of forest full of plant life of all kinds, including wild orchids and tea. The ruler was known to possess both gentle qualities and exceptionally severe qualities and evidently these two plants brought out both.\u003c\/p\u003e\n\u003cp\u003eOne spring morning the ruler sent his gardeners out to the forest to bring back some fresh cut orchids for his palace. (The gentle side of the ruler enjoyed being surrounded by the beautifully colored blooms.) The gardeners decided to explore a region of the forest they had never visited before and happened upon a clearing filled with orchids of every imaginable description. They began cutting blooms working their way from the edge of the clearing to the centre. Once they made it to the middle they were amazed to discover a variety of tea none had ever seen before. The head gardener, knowing this would please the ruler, plucked a basket full of leaf from the bush.\u003c\/p\u003e\n\u003cp\u003eUpon returning to the palace he noticed that the leaf had been bruised during the trip back. The bruised leaf he decided would be perfect for preparing an oolong tea. He was right. The edges of the leaves had a slightly brownish hue that turned a subtle pink when fired and the finished tea was wiry with delicate crinkles. In the cup it offered exceptional orchid-like notes and a delicately balanced sweetness - it was perfect. He presented the tea to the ruler. The ruler loved it and asked very sweetly where he had found such exceptional tea leaves. The gardener took him deep into the forest and once they had found the bush the ruler rewarded him...by chopping off his head. (As mentioned, he could be a severe man.) Evidently the ruler didn't want anyone else to know where the tea had come from. The semi fermentation gives the tea a little bit more body than a green tea but less body than a black tea ... and interestingly it gives the flavor a very unique twist. This particular type is the nbr 1 grade. When comparing to other Ti Kuan Yin's you will see a better leaf presentation which results in a more refined character - and hence the special moniker - PHOENIX #1. It has been written that Ti Kuan Yin is at first bitter then sweet and finishes with a fragrance which lingers on your palate.\u003c\/p\u003e\n\u003cp\u003eWe find this particular grade is sweet with a fragrant finish and has no bitter notes.The legend of Ti Kuan Yin is that a certain Mr. Wei a tea grower in Sand County Fujian had a dream in which a spirit advised him that a treasure was awaiting him behind a temple dedicated to Kuan-Yin. Upon his discovery of the treasure he was to share it with his neighbors. The next day he diligently searched for the treasure but could only find a tiny tea shoot. Even though he was disappointed he took the tea shoot home and cared for it extremely well for the next 2 years. At the end of the 2-year period the tea bush yielded 1 kilo of tea. He brewed some in a lidded bowl and noticed an unusual fragrance plus the fact that the flavor remained pure and strong even after several additions of water. To their surprise when the tea was processed it had developed an amazing milky character which was attributed to the motherly character of the old moon. Milk Oolong, like all Oolongs, is considered a semi-fermented tea meaning it is somewhere between a black and green tea. Over the years production methods have remained unchanged for the most part although some aspects like withering temperatures have been automated and regulated. First the leaf is plucked from gardens situated between 500 - 1200 meters and is produced between March and December. Next the plucked leaf is withered in air-conditioned rooms until it is has reached the desired level of fermentation. The fermented tea is rocked or sifted to sort the prime leaf required and steamed over hot fire. Finally the tea is dried then re-sorted to ensure leaf quality and packed. After plucking the fresh leaf is allowed to oxidize for a very limited time before drying - which leads us to the third factor making this tea so special. Undaunted, she disguised herself as a boy and set off for a far away boarding school. Along the way she met another student Liang. Liang was headed for the same school as Zhu and the two became best of friends. Liang had no idea that his friend was actually a girl. Years passed and Liang found himself the victim of an arranged marriage to a woman he did not love. Zhu revealed that she was indeed a woman and offered to marry him, but his parents objected. Heartbroken, Liang died and his body was laid in a dark tomb.\u003c\/p\u003e\n\u003cp\u003eOn the day of the funeral, Zhu stood weeping when suddenly the tomb miraculously cracked open. Realizing that her only chance to be with Liang was in death, she threw herself into the tomb and died. The semi fermentation gives the tea a little bit more body than a green tea but less body than a black tea. Interestingly, it gives the flavor a very unique twist. You will see (particularly in the infused leaf) that the edges of the leaves are slightly bruised (brownish). The reason for this is that the leaves are lightly bruised to start the oxidation process. Because they are more full bodied than green teas oolong teas must not be picked too early or at too tender a stage. They must be produced immediately.\u003c\/p\u003e\n\u003cp\u003eUnlike leaves for green tea those destined to be oolong are wilted in the direct sun and then shaken in tubular bamboo baskets to bruise the leaf edges. The bruising is what makes the edges oxidize faster than the center. After 15-25 minutes (depending upon ambient temperature and humidity levels) the tea is fired locking in the special flavor profile.\u003c\/p\u003e\n\u003cp\u003eThere are several grades of Ti Kuan Yin (a.k.a Iron Goddess of Mercy). This particular type is the premium grade - below the superior grade but has many of the characteristics of top Ti Kuan Yin Oolongs. It has been written that Ti Kuan Yin is at first bitter then sweet and finishes with a fragrance which lingers on your palate. We find this particular grade is sweet with a fragrant finish and has no bitter notes. The name Iron Goddess of Mercy came from a farmer named Mr. Wei. At the temple dedicated to Kuan Yin he was asked what is the name of his special tea. \"It must be called Ti Kuan Yin in honor of the iron statue to Kuan Yin,\" he replied.
