Legend has it that a young maiden from a small village near the base of a mountain the only child of a local farmer and his wife fell ill one winter. Summoning a doctor was impossible as the family's village was unreachable by road during the wintertime. In desperation the family decided to venture up the mountain to the home of an old shaman that was rumored to live near its peak. The climb to the top took almost a full week the farmer having to carry his ailing daughter to the summit. By the time they reached the top the girl was dead. Distraught the farmer spoke to the shaman anyway. While there was nothing she could do to bring the girl back to life she made the farmer a promise: if he buried his daughter at the top of the mountain as an offering to the gods he would be rewarded for his loyalty to his only child.\u003c\/p\u003e\n\u003cp\u003eThe shaman said that with her body resting so close to the heavens the girl's spirit would rise into the clouds to become moonlight and from its rays wherever they touched the earth in the spring tea would blossom. The man did as he was told and ventured back down to his home. Weeks later the snows of winter melted and the days and nights became warmer. One morning after a particularly warm night the farmer and his wife awoke to find their yard filled with shoots of new tea. They harvested a bowl full of the leaves brought some water to a boil and to their delight found it to be delicious. In certain villages of that province a pot of this tea is purported to ward off evil spirits. This belief stems from a centuries old tale that centers on an old tea grower and his wife who worked a small plot of land high in the hills.\u003c\/p\u003e\n\u003cp\u003eSo the story goes the couple was being terrorized by a renegade band of monkeys. Time and again they woke up to discover that the night's flush of new tea shoots had been pulled apart by the nimble thieves. They tried everything to stop the monkeys from covering the crop with netting to buying two large dogs to scare the group away. Nothing seemed to work.\u003c\/p\u003e\n\u003cp\u003eIn desperation the husband decided that he would have to travel over the mountains to a remote cave where it was rumored that a shaman lived whom he could ask for help. The man packed his bag and set off. Upon reaching the cave he explained his problem to the holy man. The holy man told him that he should go away and come back in 3 days for the solution to his dilemma.\u003c\/p\u003e\n\u003cp\u003e3 days later the man returned and was given a recipe for a new type of tea written on a parchment. The holy man explained that since the monkeys always came looking for tea if he gave them 100 pounds of this produced tea they would depart and never return. The grower thanked the holy man and set off for home. On the way he studied the new recipe which was very complex. The tea was a variety of Mao Feng which in English means white downy tips ( mao means white down and feng means tips.)\u003c\/p\u003e\n\u003cp\u003eThe production method involved 11 steps - 4 stages of frying 3 stages of kneading followed by 4 stages of baking - it was worth a shot. The man and his wife spent the next week producing the new tea. Once they had 100 pounds they left it out in a wooden chest near their tea patch.\u003c\/p\u003e\n\u003cp\u003eThat night as usual they heard the monkeys descend on the farm shrieking and pounding the earth. The next morning they rushed outside to find that the chest was empty. The monkeys had taken the tea and as the legend goes never returned again. Whether or not you believe this ancient tale there is one thing you can be sure of - this is a spectacular Chinese tea. The mercenary told the grower that he had one year to pay back the debt he owed or he would claim their daughter. Faced with the prospect of giving his only daughter to be the man's concubine the grower began to pray.\u003c\/p\u003e\n\u003cp\u003eAfter a few weeks the grower and his wife both had the same dream. In the dream a pair of doves told them that in the morning two real doves would appear on the farm gate. The grower and his wife should follow the birds deep into the woods where they would find a tract of undiscovered wild tea. From this tea they were to pluck only the top downy buds. These they were to process in a special new style that would help them make enough money to save their daughter.\u003c\/p\u003e\n\u003cp\u003eThe next morning just as the doves had said the grower and his wife found the wild tea. They plucked as many baskets as they could carry and brought them back to their house where they set to processing them. 3 days later they brought the tea to market and made enough money in one day to pay back their debt - a miracle!\u003c\/p\u003e\n\u003cp\u003eFrom that day forward they called their new tea 2 Doves Silver Needle in honor of the birds who had saved their daughter. It's an amazing story. Whether or not you choose to believe it the amazing qualities of this tea can't be disputed. They are carefully picked by hand sun dried (some white teas are gently steamed in a pan to evaporate the water content) and then packed in air-tight containers.\u003c\/p\u003e\n\u003cp\u003eWhen brewed white teas give hardly any color and infuse a very delicate flavor into the water.In testing by a cancer institute in Massachusetts (Women and Cancer Fund) this particular tea has been found to be very high in polyphenols - the antioxidants found in tea. Antioxidants have been shown to act as inhibitors in the growth of cancer cells.Near Adam's Peak the cloud kissed and mist blown slopes are blessed with some of the finest teas on Earth. This white tea is especially rare as only 30 kilos are made on a weekly basis. The Saint also known as Abba Pachomius was the first person to establish a monastery where monks could live together communally. His story is an amazing one. Born and raised in Thebes a city in ancient Egypt Pachomius was picked up in a sweep for new recruits by the Roman army when he was about 20. He was held captive by the marauding army but was visited daily by some Christians who brought him food and water. Touched by their generosity Pachomius who was born a pagan decided that when he was released he would become a Christian. Miraculously he was freed without ever seeing combat. True to his word he sought out a nearby Christian hermit and studied with him for some time. Deciding that the solitary life was not for him Pachomius established his first monastery in Egypt sometime between AD. 318 and 323. Word about this new lifestyle spread and soon monasteries were sprouting up throughout the country. In fact within one generation of his death it is estimated that there were upwards of 7000 monasteries in Egypt.Over the ensuing centuries Christian monasticism spread throughout the world most notably in Europe. (And here's where all of this begins to relate to tea.) The topic came up when he asked about the interesting spiral leaf shape of the tea they were drinking to accompany the likewise interesting meal. Needless to say the tale he was told was incredible, as well.\u003c\/p\u003e\n\u003cp\u003eAccording to the legend an ancient tea grower one of the Dai people (an ancient ethnic Fujian minority) had an excellent year. His tea trees some of which dated back to the 8th century had performed marvelously well due to an abundance of rain that year. Now as everyone in China knows Dragons are responsible for controlling water and weather. (For this reason many of China's rivers are named after dragons ie. Fujian's Nine-Dragon River.) Returning home from market the ancient grower was accosted by a rain dragon standing in the road. The rain dragon demanded a share of the man's profit arguing that without his influence over the season the man would not have had such a bumper crop. Foolishly in an effort to hold onto his profits the grower told the dragon that it was because of his pruning technique that he had such a great year rather than the rain. The dragon flew off incensed to discuss the matter with his cousin a winter dragon in charge of snowfall. The dragons determined that until the grower repented and showed them some respect that come winter they would cause snow to fall without end. Winter came and sure enough the snow fell. And fell.\u003c\/p\u003e\n\u003cp\u003eAfter 4 months with the snow piled to the rooftops the snow dragon visited the tea grower on behalf of his hibernating cousin and demanded some form of offering. Again the grower explained that the rains had nothing to do with his crop. The snow dragon left and the snow continued to fall. Finally after 10 months of continuous snowfall the grower gave in partially. But rather than simply pay the dragon he devised a plan that could serve them both. He offered to develop a special new tea designed in the shape of the dragon's tail. In this way the crafty grower could offer respect and sell the tea for his own profit. The dragon respecting the man's fortitude and refusal to back down agreed and Snow Dragon white tea and an amazing story was born! To this day Snow Dragon White tea is produced according to the ancient method devised many years ago. Only the buds of Fujian's top bushes are plucked and gently processed by wrapping each around a reed before drying. White tea leaves are plucked from a special varietal tea bush called Narcissus or chaicha bushes. Secondly the leaves are not steamed or pan-fired (the process used in green teas) or fermented and fired (the process used in black tea). The leaves are naturally withered and dried in the sun. If mechanical drying is required it is a baking process at temperatures less than 40'C. Thirdly only special 'two leaves and a bud' are selected. These leaves must show a very light green almost gray white color and be ideally be covered with velvet peach fuzz down. Sowmee is one of the lower grades of white tea but despite this it has the properties attributed to white teas. The leaves for Sowmee are plucked during late April May and June. The lack of processing and hand selection is evident in the leaf appearance of Sowmee as it is somewhat mixed and tending flaky and flat. This Sowmee has a more pronounced taste profile - almost oolong tea-like. Many white tea drinkers prefer this cup in that there is a 'substance' to the taste compared to the delicate nuances of other white teas.Researchers at the Linus Pauling Institute in Oregon tested white teas on selected rats to test for the ability of white tea to inhibit natural mutations in bacteria and to protect them from colon cancer. Interestingly white teas were found to be more effective than green tea in inhibiting the early stages of cancer but researchers pointed out that their study was on rats and the effects should not be extrapolated to humans. The researchers also found that white tea contains higher levels of caffeine compared to green tea brewed under the same conditions.
