After plucking the tea is steamed in order to denature it, and halt fermentation. Next, the freshly steamed tea is rolled and pan-fired, a process that gives the tea its signature glossy sheen. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).
