Due to the variety and diversity of species, this lush quarter of the world is considered something of a natural museum. One of the more magnificent of these is a bird of prey, the Peregrine Falcon, (\u003cem\u003eFalco\u003c\/em\u003e \u003cem\u003eperegrinus peregrinator), \u003c\/em\u003ea bird whose range spans South Asia from Pakistan to India, Sri Lanka and Southern China. In some of the region's remote mountain villages the Peregrine Falcon is revered as a sacred and spiritual bird. Now, as is the case with many animals making their homes in one of the World's most ancient, continually inhabited places, legends about them abound. Naturally, since Yunnan is also home to some of the finest teas grown on the planet, it follows that one of these tales would involve both the bird and the plant. In fact, according to one such legend, Peregrine 1\u003csup\u003est\u003c\/sup\u003e Flush Mountain black tea owes its existence to a falcon that lived many centuries ago.\u003c\/p\u003e\n\u003cp\u003eThe story goes that one day, a young boy was out hunting rabbits in the hills above his village. Venturing farther up the steep slopes than he'd ever gone before, the boy came across a falcon caught in a type of snare - in those days, it was customary for aristocrats to keep the birds as pets. Clearly someone important had left the trap, so the boy studied the markings on its side. Discovering that it belonged to a local warlord, the boy found himself faced with a quandary - rescue the bird and face certain death if caught or let the helpless bird die. The boy closed his eyes to think. Suddenly a brisk wind whipped through the forest, carrying with it the pained voice of the falcon. The bird told the boy that if he freed him, he would lead the boy to a great field of undiscovered tea. With this new variety of tea the falcon explained, the boy could earn enough money to pay a great tribute to the warlord and grow wealthy himself. The boy opened his eyes and released the bird who, true to his word, directed him to the new tea.\u003c\/p\u003e\n\u003cp\u003eAnd so was born Peregrine First Flush Mountain China Black. Over the years, this fabulous tea has come to be regarded as one of the best produced in Yunnan. Manufactured during the spring flush, the cup overflows with malt and possesses a raw, black character. Place 1 slightly heaping teaspoon of loose tea, 1 tea bag or 1 Q3 portion control pack for each 7-9oz\/200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewing Cold\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cspan\u003eIced tea brewing method (\u003cem\u003ePitcher\u003c\/em\u003e):\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e (to make 1 liter\/quart): Place 6 slightly heaping teaspoons of loose tea, 6 tea bags or 6 Q3 portion packs into a teapot or heat resistant pitcher. Using filtered or freshly drawn cold water, boil and pour 1 1\/4 cups\/315ml over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the tea or removing the bags. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water. (Note: Some luxury quality teas may turn cloudy when poured over ice. Add hot tea to a 12oz\/375ml acrylic glass filled with ice, straining the tea or removing the bags. Not all of the tea will fit, allowing for approximately an additional å serving.
