"An apple a day keeps the doctor away." While this phrase may sound about as American as apple pie, it was actually coined in Wales by an unknown apple lover in the 19th century. By the 1800s, the virtues of eating apples, both in terms of taste and health was known in Europe for centuries. Saxon manuscripts dating back as far as 1470, make mention of the benefits of eating the sweet round fruit. One such text, the Encyclopedia of Bartholomeus Anglicus explains: "The Appyll tree... is gracious in syght and in taste and vertuous in medecyne " (The apple tree is gracious in sight and in taste and virtuous in medicine.)
Modern research has largely confirmed the musings of Bartholomeus Anglicus and appear to indicate that apples, while they contain relatively low amounts of Vitamin C, are incredibly high in antioxidants and may subsequently help reduce the risk of colon, prostate and lung cancer.

Brewing Hot
When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180'F or 90'C. Place about 1-1 1/2 teaspoons in your cup, let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea is exhausted.
Brewing Cold
(to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
