And why not? As the pipe and drum carry the tune, scores of dancers step and twirl with about as much exuberance as has ever been presented on a stage. Suffice it to say, the energy levels of the dancers is high, incredibly high.

It should come as no surprise then, that when searching for an apt name for this energizing blend of Kenyan and Malawian greens and Japanese Matcha, we should have stumbled upon the exuberance of Riverdance. (Well, that and the fact that the Izu Matcha adds a lovely touch of emerald green color to the mix.) Like the dance itself, this fabulous cup opens with high-energy notes - freshly cut grass and honey, rounded by gentle layers of mossy astringency. An incredible tea worthy of a round of applause all its own.

More about the teas used to create this blend:

Kapchorua: Certified by the Ethical Tea Partnership and Fair Trade organization, Kapchorua is one of Kenya's premiere estates. The secret is to use water that is about 180'F or 80'C. Place about 1-1 1/2 teaspoons in your cup, let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea is exhausted.

Brewing Cold

(to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
