In all probability, they've been an important part of their diet since the place was known as Carthage, at least as far back as 814 BC. For a time, Carthage, in what is now the Tunisian capital of Tunis, was part of the Roman Empire and supplied lemons to Roman citizens from Rome to Londinium. (Incidentally, when the Roman Empire collapsed sometime around the year 476 AD, shipping routes went down and lemons weren't seen in Europe again until the 13\u003csup\u003eth\u003c\/sup\u003e century when the Crusaders discovered them in Palestine.) Mint, although its history in Tunisia isn't quite as long as the lemon's definitely holds a vaulted place in Tunisian culture. Place 1 tsp of Rooibos for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewing Cold\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e(to make 1 liter\/quart): Place 6 teaspoons of rooibos into a teapot or heat resistant pitcher. Pour 1 1\/4 cups of freshly boiled water over the Rooibos. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the Rooibos into the serving pitcher straining the leaves. Add ice and top-up with cold water.
