  • Ever have one of those nights, the ones where you toss and turn, counting sheep and worrying about how tired you're going to be the next morning? We all have them - none of us love them. However, as sleepless as you may get from time to time, be thankful you haven't gone without sleep as long as Thai Ngoc of Viet Nam. In 2006, Thai Ngoc told a Vietnamese news reporter that he had been awake a full 11,700 nights in a row - 33 years! Amazingly, Ngoc suffered from none of the common symptoms of sleep deprivation. In fact, it was reported that despite his lack of sleep, he could still carry a 100kg (220.4 lbs) sack of pig feed 4 km (2.5 miles). Then there is the case of world record holder Randy Gardner who stayed awake for 264 hours in 1965, all for a school project. (Why isn't Thai Ngoc the world record holder? The Guinness Book of Records has stopped recording feats of sleep deprivation due to the associated health risks.)

    So what are the risks? The symptoms of sleep deprivation range from mild to serious. On the milder end, lack of sleep can lead to aching muscles, blurred vision and baggy eyes. On the more serious side of things, insomnia can lead to memory loss, weight loss and fainting. Suffice it to say, we humans need our sleep!

    What can you do if the sandman refuses to visit? Often a simple cup of soothing and relaxing herbal tea can be extremely helpful. (NOTE: If you experience chronic or persistent sleep deprivation, please speak to a certified health practitioner.) One of the best and most popular herbal teas to combat insomnia is all-natural, organic camomile. Widely believed to posses many sleep inducing qualities, camomile also offers a pleasant, honey tinged floral flavor. Typically, camomile tea is brewed and served with a splash of lemon to enhance the sweet character of the flower and an infusion of vitamin C.   • Brewing Hot

    Bring freshly drawn cold water to a rolling boil. Place 1/2 to 1 teaspoons of loose tea for each 7 oz. cup into your teapot. Infuse with freshly boiled water. Cover and let steep for 3-7 minutes according to taste. (The longer your steeping time the stronger the flavor). Strain into cups and add sugar to taste. Milk is not typically not added to camomile tea.

    Brewing Cold

    (1 lt./qt): Place 6 teaspoons of loose tea into a teapot or heat resistant pitcher. Infuse with 1 1/4 cups of freshly boiled water. Steep 5 minutes. Quarter-fill a serving pitcher with cold water. Strain tea into pitcher. Add ice and top-up with cold water. Garnish and sweeten to taste. [Rule of thumb: When preparing freshly brewed iced tea, double the strength of your brew since it is to be poured over ice and diluted with cold water.]
