  • For most of us in the Western world, even imagining a corner of the planet that still houses animals left over from the Miocene epoch (23.03 to 5.33 million years ago) seems unbelievable. As unbelievable as they might sound, such places still exist. As you can probably imagine, these places still retain almost pristine geological and environmental conditions. With their habitats largely unchanged since ancient times, select ancient animal species continue to thrive in them despite the realities of the modern world. Jianxi Province is one such place. Located in China's South East, Jianxi is one of the last homes of the Muntjac, a genus of Muntiacus, otherwise known as Barking Deer. The Barking Deer made its first appearance on Earth around 15-35 million years ago and can still be found roaming Jianxi's hills in relatively robust numbers. The region's abundant sources of fresh water and lush valleys continue to allow this remarkable animal to live in peace as it has always done. Not surprisingly, these same pristine natural conditions also have an amazing effect on Jianxi's tea crop, giving it some of the highest antioxidant counts anywhere.

  • Brewing Hot

    When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180'F or 80'C. Place 1 - 1 1/2 teaspoons of leaves in you cup and let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea is exhausted. Look at the pattern of the leaves in the brew - they foretell life.

    Brewing Cold

    (to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter-fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
