  • In China it is said that much like the milestones by which we measure the passing of time those Where were you when moments you will remember every sip of White Eagle Long Life tea. Were you on a boat cruising through the three Gorges of the Yangtze? Under the canopy of a Grant St. cafe in San Francisco's Chinatown? Or was it after dinner on Pender St. in Vancouver's Chinatown? Wherever you go in life whenever you sip it you will remember. This saying has its roots in ancient legends told high in the mountains of China. Mountain mythology has it that there was an old race of mountain men who lived in caves and had learned the secrets of flight and immortality. The secrets were told to them by some women who lived in the valleys below. The women had learned the secrets directly from the eagles who lived in the great forests separating the men and the women. One day the men invited the women up for Mao Feng tea the local specialty. The women flew up to visit and were so impressed by the tea offered that they shared the secret of flight with them and blessed their teapot so they would live forever and remember every sip of the delicious tea as they did so. We'll be the first to admit that White Eagle Long Life still has not yet been scientifically proven to grant immortality. That said it is packed with anti-oxidants so it is very good for the body. It's also delicious. The cup is full and round with honey like sweetness mild astringency and notes of orchid. The unique production method used in its manufacture is one of the oldest in China. Pre-infusion the dried leaf is straight and sturdy. White Eagle Long Life like all Mao Feng teas is considered one of China's 3 celebrated teas. The other two places in this triumvirate of cups are held by Dragonwell and Pi Lo Chun. Like these Mao Feng production is heavily regulated to ensure an authentic product. We've sourced this tea from a longtime friend and grower in Hunan province known for his strict adherence to these regulations and progressive environmental record. In fact the first sip we ever had was in his field kitchen. The water was boiled over a fire in a 500-year-old kettle. The sun was beginning to rise over the lofty peaks overhead.   • Brewing Hot

    Traditional method (see note below): When preparing by the cup this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180å¡C. Place 1 slightly heaping teaspoon in your cup let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Adding milk and sugar is not recommended. Once the water level is low - add more water and so on and so on - until the flavor of the tea is exhausted. Look at the pattern of the leaves in the brew not only do they foretell your fortune but you can see the bud and shoots presenting themselves looking like they are about to be plucked.Modern Method: Bring filtered or freshly drawn cold water to a rolling boil. Place 1 slightly heaping teaspoon of loose tea 1 tea bag or 1 Q3 single serve packet for each 7-9oz/200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea). Adding milk or sugar is not recommended. Note: Traditionally the recommendation has been that green tea be brewed at 180å¡. Regretfully modern society makes it necessary to consider that water may not be free of harmful bacteria and other impurities. Therefore you need to boil water to kill bacteria. If you wish to use traditional brewing temperatures bring the water to a boil and allow it to cool to the desired brewing temperature - it's the food safe thing to do!


    Brewing Cold

    (Pitcher): (to make 1 liter/quart): Place 6 slightly heaping teaspoons of loose tea 6 tea bags or 6 Q3 single serve packets into a teapot or heat resistant pitcher. Using filtered or freshly drawn cold water boil and pour 1 and 1/4 cups / 315ml over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the tea or removing the tea bags. Add ice and top-up the pitcher with cold water. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water. (Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about!)
