So, what's so good about ginger? We're glad you asked. In addition to having an exceptional antioxidant count of its own, ginger has been considered as something of a panacea for millennia in almost every corner of the globe. In ancient Chinese medical texts, ginger was reported to cure everything from coughs to the common cold. The ancient Romans baked ginger into bread and ate it at the end of meals to aid digestion. In India, ginger to this day is made into a paste that is rubbed on the temples to ease headaches.
Is there anything ginger can't do?
Well, ginger can't blend itself into a fabulous green tea blend. (That's where we come in.) So, why did we choose to blend the two green teas that we did? Again, we're glad you asked. Our research, conducted at Canada's University of Guelph, indicated that teas grown at the high altitudes both the Koisabei Dryer Mouth and Japan Sencha are grown at exhibit higher than usual antioxidant counts. It appears that the direct sunlight at such altitudes combined with the clear, pure air boosts leaf photosynthesis, which in turn boosts antioxidant levels -a true win/win situation. The result is a wonderfully smooth, slightly grassy green tea layered by the delicate spice of fresh ginger -a refreshing cup that's sure to put some spice in your step!

Brewing Hot
When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180'F or 90'C. Place about 1-1 1/2 teaspoons in your cup, let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea is exhausted.
Brewing Cold
(to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
