  • Brewing Hot

    Use one tea disc per 3-4 cup teapot. (Preferably glass in order to watch the leaves unfold.) Bring your kettle to just under the boiling point, 80C/175F. Infuse 3 - 5 minutes and enjoy. Note: This tea may be re-brewed 3 - 5 times.

    Brewing Cold

    (to make 1 liter/quart): Use 3 discs per 3-4 cup teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes and strain into your serving pitcher. Add ice and top-up pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water].
